We challenged chefs of three different skill levels - amateur Emily, home cook Lorenzo, and professional chef King from the Institute of Culinary Education - to make fried rice. After each of them had presented their creation, we asked a food scientist to review their work. Which rice would you ask for twice?

    Lorenzo's choice of fried rice of topping is like my father, but better. Basically just throw in all the vegetables and meat in the fridge, and voila, the fried rice that was so luxurious of topping that you can't find another thing to cook the next day.

    i made a greek flavoured fried rice yesterday. i used ground turkey as the protein, added onions and garlic, also used a bit of greek dressing, and balsamic vinegar. for spice i used greek seasoning, onion powder, garlic powder, and thyme. i Also wilted some leafy greens in the rice. topped with cucumber and feta cheese.

    My initial reaction to using Spam was horror. But then I realized that I had a can of Spam in my own pantry. But I have never been tempted to actually eat it. I live in Oakland right next to the Hayward Fault. I have lots of earthquake preparations. You know - guns, bottled water and canned food. In there is some Spam. The 'Big One' is late - at least a couple years late according to the seismologists. But when the Covide-19 chased us all inside and Amazon stopped delivering groceries, that canned earthquake food came in handy. I ate some of it all - except the Spam. I'll need a bigger calamity than Covide-19 to make me eat that.
